Vegan Paella

Timings: 5 mins prep, 20 mins cooking

Ingredients

1 red pepper

1 onion

1 tbl Zing Foods Paprika Spice

1 tsp smoked paprika

125g paella rice


Method

Chop the onion and red pepper and then gently cook with a tbl of Paprika Spice for 2-3 mins until softened


Add a tsp of smoked paprika and the rice. Cook for 1 minute


Then a ladle at a time add vegetable stock or water until the rice is nearly cooked


Finish off with French beans and peas


Artichoke hearts would work well too, or any other veg - list is endless!
