Turmeric Spiced Quinoa Salad

Timings: Prep 10mins - Cooking 10mins


200g Cooked Quinoa

100g Pistachio shelled

2 Courgettes

2/3 Jar of preserved Lemons

2 Tbps Zing Foods Turmeric Spiced Oil

1 Handful of mint

Lemon juice, salt & pepper to season


Cook the quinoa according to instructions on the packet. Gently melt 1 tbsp of the Turmeric Spiced oil in a frying pan, add pistachios, cook & stir for 3 minutes- remove & set aside, add courgettes to pan mix into the oil, cook for 3-5 minute, stirring occasionally, remove & set aside. Add cooked & drained quinoa to pan on reduced heat. Add the second tbsp of Turmeric oil, melt and mix in. Add the following, mixing in after each addition, courgettes, nuts, chopped lemon & mint. Add poppy seeds and season.
