Turmeric Spiced Lentils and Rice

Servings: 4-6 as a side

Timings: 20 mins prep, 20 mins cooking

A Mujadara is a vegetarian dish with Middle Eastern & Arab influences

It's traditionally made with rice, lentils & and caramelised onions but I've swapped the rice for cauliflower rice

The spices can range in simplicity from just salt, pepper and cumin to more complex flavours. Here I’ve used our Turmeric Spiced coconut oil

Method Sweat off half an onion with a couple of teaspoons of Turmeric Spiced oil

Blitz half a small cauliflower in a food processor (don't go too far!) or grate it

Add the cauliflower rice to the soft onion and cook for 3-4 mins

Cook 100g lentils as per packet instructions

Then when the lentils are cooked mix in with the cauliflower rice

Add 2 heaped teaspoons of Turmeric Spiced oil, season, garnish with coriander and crispy fried onions and serve. Delicious
