Timings: Prep 5mins - Cooking 15-60mins
2 large courgettes
2 garlic cloves
2 Tbsp Turmeric Spiced coconut cooking oil
1 to 2 Tbsp Greek-style yoghurt or creme fraiche (Alpro Greek-style greek yoghurt or Oatly oat fraiche for vegan version)
1 Lemon Juice
Season with plenty of salt and pepper
Courgettes- You can either BBQ whole with skin on for 15minutes (or until charred on the outside). This can also be oven bake whole for 1hr 200c or until outside becomes blackened.
Garlic - you can put in a loose foil envelope and BBQ for 5minutes or bake in the oven turning occasional for 15minutes.
When cooked, scoop out the courgette flesh and garlic flesh and put in a blender with two Tbsp of the spiced coconut cooking oil and blend.
Serve at room temperature for best flavour.
Warning - Garlic alert! I love garlic, but if you don’t, you might want to put less in.
