Turmeric and Coconut Pancake

These pancakes make a super colourful base to your stir fry but only if you have a really good non-stick frying pan as they are v. fragile!

Ingredients

100g rice flour

1 tsp Turmeric Spiced cooking oil

200ml coconut milk

120ml water

2 spring onions chopped

Optional chilli

Salt and pepper


Method

Mix everything together and fry in our Turmeric Spiced coconut oil in a non-stick frying pan


After you have made the pancakes, in the same pan stir fry the vegetables you want to use in our Turmeric Spiced coconut oil, it's that simple


In my fridge I had baby courgettes, red onion, shiitake mushrooms and yellow pepper, but put in or take out whatever you have in your fridge
