Pepper Spiced Red Lentil Dip

Servings: 6-8

Timings: Prep 10mins - Cooking 10mins


250g Red lentils

1 Lemon Juice

2 Tbsp Pepper Spiced coconut cooking oil

Salt & Pepper to season


Cook the lentils according to packet instructions. Drain and add to blender along with 2 tbsp Pepper Spiced oil. Blend for 3 minutes then add Lemon Juice. Blend for a further 3-5minutes until smooth - season with salt and pepper.

Serve at room temperature for the best flavour!

I served these with Pepper Spiced roasted pitta chips; you literally spread a thin layer of spiced oil onto the pitta and slice into 8 or so pieces. Then bake in the oven for about 3 minutes till slightly hard.
