Pepper Spiced Carrot Dip with Dukkah

500g carrots

1 red onion

1 tablespoon Pepper Spiced coconut oil

1 garlic clove

A slice of ginger

Cup of water


Chop carrots and onion and roast with a tbs Pepper Spiced oil for about an hour

When nicely caramelised add 1 clove of chopped garlic and sliced ginger

Cook for 10mins more. Careful to not burn the garlic

Put all into a liquidiser and whizz up with water to help blend

Serve with pitta, chips, crisps, carrots or peppers
