Pepper Spiced Butterbean Spread

This is a really easy, healthy and tasty recipe to make

This recipe lends itself well as a spread because unlike the turmeric spiced version, this has more of a bitter flavour. After various different flavour combinations, we now spread it on toast and top with sun dried tomatoes. Definitely the winner!

Ingredients

2 tsp Pepper Spiced oil

1 400g tin butter beans

2 tbs water

1 clove garlic

1/4 - 1/2 lemon juice


Method

Add 2 tsp of the Pepper Spiced oil to a saucepan and warm to melt to wake up the spices. Add 1 tin of butter beans and garlic and take off the heat


Blitz everything up adding lemon juice and salt to taste. Leave to chill out in fridge overnight. Serve on toast topped with sun dried tomatoes
