Chachouka Paprika Spiced

Servings: 2

Timings: 25 mins prep, 60 mins cooking

An easy recipe, it does take a little time so save this for when you can enjoy and savour, it really is well worth the wait! Serve with fresh sourdough or crunchy green salad. Great for a lunch or light supper

Chachouka is a North African dish, I have used our Paprika Spiced coconut oil as the paprika flavours we blended were a nod to North African cuisine. I’ve used inspiration from the River Cottage "Veg Everyday”. Unlike my talented business partner Annabelle, I need a little help with recipes! She makes the most incredible sourdough which I have sliced and pictured here. For her sourdough recipe and other inspiration visit her instagram page @annabellemaclayfood

20g Zing Foods Paprika Spiced coconut oil

1 large onion finely sliced

1 garlic cloves crushed

1 red Pepper thinly sliced

1 yellow pepper thinly sliced

400g tin of chopped tomatoes

2-4 eggs (optional) or for vegan option use a vegan mozzarella instead of eggs

Salt and pepper to season

Gently melt the Paprika Spiced oil and continuing with a low heat add the onions, cook for 10 mins

Add the peppers and garlic, and cook for a further 20 minutes. Then add the tinned tomatoes and cook gently for a further 15 minutes. Scoop out enough space for the eggs/cheese rounds and bake for 10-15 minutes at 180 degrees
