Carrot and Coriander Soup

Timings: 5 mins prep, 30 mins cooking

Ingredients

1 onion chopped

500g carrots

1 tbl turmeric spiced coconut oil

Half bunch coriander

Veg stock or water


Method

Sweat off the onion in a tbl of Turmeric Spiced coconut oil for 3-4 mins

Add chopped up carrots and carrying on stirring for a further 2-3 mins

Add water/veg stock until carrots are covered by half an inch and cook for 20 mins

Add coriander and then blitz

Then season, add red chilli flakes and serve
